Of a beautiful pale gold color with green reflections, Chablis has a powerful nose, iodized and fresh, floral and mineral characterized by notes of almonds and fresh hazelnuts, citrus fruits and white flowers.

The mouth is balanced, with a fleshy attack. The evolution and the finish are more nervous, taking on an acidic character. A finesse highlighted by a great freshness... White peach flavors come to sublimate the minerality which is very present.

It can be eaten young on fish or poultry terrines as well as grilled or poached fish. It is a perfect accompaniment to oysters.
It goes very well with certain cheeses such as goat's cheese, Beaufort, Comté and Emmental.

Age makes it a little more golden and spicy.
